We characterized the flavor chemicals in a broad sample of commercially available electronic cigarette (EC) refill fluids that were purchased in four different countries. Flavor chemicals in 277 refill fluids were identified and quantified by gas chromatography-mass spectrometry, and two commonly used flavor chemicals were tested for cytotoxicity with the MTT assay using human lung fibroblasts and epithelial cells. About 85% of the refill fluids had total flavor concentrations >1mg/ml, and 37% were >10mg/ml (1% by weight). Of the 155 flavor chemicals identified in the 277 refill fluids, 50 were present at >= 1mg/ml in at least one sample and 11 were >10mg/ml in 54 of the refill fluids. Sixty-one% (170 out of 277) of the samples contained nicotine, and of these, 56% had a total flavor chemical/nicotine ratio >2. Four chemicals were present in 50% (menthol, triacetin, and cinnamaldehyde) to 80% (ethyl maltol) of the samples. Some products had concentrations of menthol (Menthol Arctic) and ethyl maltol (No. 64) that were 30 times (menthol) and 100 times (ethyl maltol) their cytotoxic concentration. One refill fluid contained cinnamaldehyde at similar to 34% (343 mg/ml), more than 100,000 times its cytotoxic level. High concentrations of some flavor chemicals in EC refill fluids are potentially harmful to users, and continued absence of any regulations regarding flavor chemicals in EC fluids will likely be detrimental to human health.

In this study, we examined the mode of metabolism of food odorant molecules in the human nasal/oral cavity in vitro and in vivo. We selected 4 odorants, 2-furfurylthiol (2-FT), hexanal, benzyl acetate, and methyl raspberry ketone, which are potentially important for designing food flavors. In vitro metabolic assays of odorants with saliva/nasal mucus analyzed by gas chromatography mass spectrometry revealed that human saliva and nasal mucus exhibit the following 3 enzymatic activities: (i) methylation of 2-FT into furfuryl methylsulfide (FMS); (ii) reduction of hexanal into hexanol; and (iii) hydrolysis of benzyl acetate into benzyl alcohol. However, (iv) demethylation of methyl raspberry ketone was not observed. Real-time in vivo analysis using proton transfer reaction-mass spectrometry demonstrated that the application of 2-FT and hexanal through 3 different pathways via the nostril or through the mouth generated the metabolites FMS and hexanol within a few seconds. The concentration of FMS and hexanol in the exhaled air was above the perception threshold. A cross-adaptation study based on the activation pattern of human odorant receptors suggested that this metabolism affects odor perception.These results suggest that some odorants in food are metabolized in the human nasal mucus/saliva, and the resulting metabolites are perceived as part of the odor quality of the substrates. Our results help improve the understanding of the mechanism of food odor perception and may enable improved design and development of foods in relation to odor.

The solvent free oxidation of benzyl alcohol to Benzaldehyde using bimetallic alloy nanoparticles supported over magnesia is a benign and improved frontier in catalysis. Benzaldehyde is an important industrial feed stock of immense significance in plastic, fine and chemical industries. In this study 1% Au:Pd NPs was synthesized using sol immobilization method over different magnesia (MgO) supports. The composite nanoalloys were characterized using Nitrogen adsorption BET, X- ray diffraction (XRD), Fourier-transform infrared spectroscopy (FTIR) and transmission electron microscopy (TEM). The efficacy of Pd:Au/MgO, as a basic solid catalyst, has been tested for benzyl alcohol oxidation. The synthesized composite catalyst Pd:Au/MgO-4 showed high initial activity for freshly prepared catalysts with remarkable activity. This activity declined rapidly with number of runs, which could result from sintering of the support, agglomeration and leaching of active phase. Furthermore, MgO-3 exhibits good stability after 2nd runs, while MgO-5 and MgO-2 revealed marked increasing in activity after the 2nd runs due surface modification and exposure of active sites during reaction.

Presently, developing efficient and stable structured heterogenous catalysts with fabulous advantages of excellent ability for heat/mass transfer, facile recovery and separation, and superior stability is of great importance in terms of economic production of chemicals. Here, structured Cu-based film catalysts with novel surface superstructure composed of large quantities of interlaced and nearly vertically grown nanosheets for aqueousphase hydrogenation of furfural toward the production of furfuryl alcohol (FOL) and cyclopentanone (CPO) were successfully fabricated from structured Cu-Zn-Al layered double hydroxide (CuZnAl-LDH) film precursors. As-fabricated structured Cu-based film catalyst possessing a Cu/(Zn + Cu) molar ratio of 4:5 exhibited a superior catalytic performance in the above reaction to other Zn-free and Zn-rich Cu-based film catalysts, as well as pristine CuZnAl-LDH-derived powdered one, due to the synergistic effect between highly dispersive Cu species and favorable surface acidic sites originating from LDH-derived Zn-Al mixed metal oxide (ZnAl-MMO), as well as the presence of abundant Cu-MMO interface within surface nanosheets, being responsible for the enhanced adsorption and activation of reactant and reaction intermediates. Furthermore, due to strong interactions between Cu species and MMO matrix within nanosheets and between surface nanosheets and anodic aluminum oxide/aluminum substrate, the present structured catalyst showed high structural stability and reusability.

Cocoa fermentation is an essential step for chocolate production whereby flavor potential is generated and bitterness and astringency are moderated. To facilitate fermentation research in laboratories geographically distant from cocoa-growing regions, and to simplify and control the fermentation system, a laboratory fermentation model system was developed. The model system consisted of dried unfermented beans, artificial pulp medium, and laboratory incubator to control temperature and aeration. The model system developed in this study showed a succession of key microorganisms including Saccharomyces cerevisiae, Lactobacillus plantarum, Lactobacillus fermentum, Acetobacter pasteurianus, and Acetobacter tropicalis. The pH of cocoa beans decreased to an acceptable final pH (4.8). Sugars were well consumed and acetic acid and ethanol were produced during fermentation. Desirable volatile compounds including phenylethyl alcohol, acetoin, 2-phenylethyl acetate, and 3-methylbutyl acetate increased in the cocoa beans during fermentation. In addition, the concentration of polyphenols decreased with fermentation. These results lead to the conclusion that the model system developed in this study was able to simulate the microbial and chemical changes occurring in in situ cocoa fermentation. This laboratory-scale model system will enable systematic examination of the effects of process parameters on fermented bean quality.

Citronellol is one of the most widely used fragrances for bouquetting purposes and it is a starting material for synthesis of several other terpenoids. Nevertheless, few data have been reported on citronellol selective oxidation. Accordingly, we report our findings on the selective oxidation of citronellol with hydrogen peroxide using a set of titanosilicate catalysts with different morphologies and textural properties-conventional titanium silicalite 1 (TS-1), mesoporous TS-1, layered TS-1 and silica-titania pillared TS-1 and also studying the effect of the solvent used. Epoxidation of C6=C7 double bond was the main primary reaction in this system and trace signals of C5 allylic oxidation products were observed without formation of citronellal. Due to the presence of post-synthesis introduced additional Ti sites, the silica-titania pillared TS-1 (TS-1-PITi) provided the highest conversion among the tested catalysts; nevertheless, citronellol was oxidized over all the studied catalysts including conventional TS-1; therefore, showing that it penetrates even into MFI micropores (0.55 nm in diameter). When using acetonitrile as a solvent, the conversion was proportional to the titanium content of the catalyst. When studying the effect of the solvent, acetonitrile provided the highest epoxide selectivity (55%) while in methanol, 2-propanol and 1,4-dioxane, ring opening reactions caused epoxide decomposition.

Nature is abundant with multi-functional and efficient catalysts such as redox enzymes which scientists wish to emulate with synthetic catalysts. One approach is to tune molecular catalysts through metal-organic ligands but there are grand challenges of molecular catalysts for real applications in energy field. Here we demonstrate a robust inorganic construct based on metal-metal oxide-carbon triple junction nanostructures (ZrO2/Pd/carbon) that mimics the functions of enzymes for highly efficient proton transport. The metal oxide tunes the local acidic environment of the metal and improves its ability for proton transport, efficient adsorption of substrate, and accelerated electron transfer. Using electrocatalytic hydrogenation (ECH) of benzaldehyde as a model reaction, we show that the intrinsic activity of the metal toward hydrogenation reaction is improved by over 200 % on the triple junction nanostructured catalysts. This study demonstrates the potential of rational design of multicomponent nanostructured catalysts to achieve enzyme like properties in synthetic catalysts.

A novel method for the copper-catalyzed oxidative amination of 2′-aminoarylketones with methanol as a C1 carbon source and ammonium acetate as an amine source to construct quinazolines was established in a one-pot manner. The reaction conditions are straightforward and highly atom economic to deliver the corresponding quinazolines in high yields with wide functional group tolerance. Importantly, the present method is applicable on a multigram scale and its synthetic utility is demonstrated by synthesizing quazodine, a muscle-relaxing drug in high yields.
